秋收季节的意大利甜品

       从来没觉得苹果派好吃,记得从前学托福听力的时候好像还被灌输过窍门,凡是提到 pizza,甭管听懂听不懂肯定是在说好吃,而提到 apple pie,就一定是在说难吃。

       可是秋收的季节,摘苹果可是好玩的活动,有人家院子里的苹果树也是一树一树地结果子,不收掉在地里烂掉就更难收拾了。那么多的苹果搬回家,味道好的可不多,大多又小又酸, 跟店里买的又香又甜的品种差老鼻子了。

       味道不好,营养还在,绞尽脑汁做苹果酱、苹果派、苹果汁都是费力不讨好。不经意看到这个甜品方子,仗着它步骤简单,随意做做,没想到大受欢迎。哈哈,这下难吃的苹果,捎带着难吃的早餐 cereal 都有去处了。赶紧存下来,可以当作每年秋收的保留食谱!

Apple Pineapple and Cranberry bake:
1/2 cup           dark rum or apple juice
1/4 cup           chopped PC Dried Pineapple (if use fresh pineapple, add 1/4 cup apple juice)
1/4 cup           chopped Cranberries Sweetened Dried Fruit
Pinch              each salt and ground cinnamon
1/2 tsp            finely grated lemon rind (optional)
1/2 - 2/3 cup    Quick Oats or oatmeal crunch cereal (harder cereal is better)
1/3 cup            chopped toasted unsalted natural walnuts (or pecans or other nuts)
2 tbsp              cold butter (salted or unsalted)
2 tbsp              packed brown sugar
Pinch               each salt and ground cinnamon
3                     Medium sized apples, cored and diced (skin on)
                       any varieties should work, 2 Golden Delicious and 1 Royal Gala is just the preference of the original chef

1/2 cup            Non-fat Greek Yogurt as topping (optional)
Directions:
  
1. Mix apple juice,pineapple,cranberries,salt and cinnamon in a small pot,boil and stew for a new minutes. Turn off the heat and add lemon rind. Mix and sit for 20 min to cool.
2. Mix oats/cereal,walnuts,butter,brown sugar,salt and cinnamon in a separate container

3. Spray oil in a 2L baking dish. Add apple into 1 in the pot and then transfer the mixture to the baking dish. Add 2 on top. 

4. Preheat the oven to 400F. Bake for 30-35 min or until the apples are tender.

5. Serve hot or cold, add Greek Yogurt on top.
