Banana Recipes

Banana Granola Cookies - No Guilt Snacks :-)

3-4 tbsp  coconut oil or butter, melt to room temperature
1/4 cup   coconut milk, almond milk or regular milk
3 tbsp     maple syrup, runny honey or date molasses (optional)
1/4 tsp    vanilla extract or ground vanilla (optional)
1 pinch   sea salt
1 tbsp     cocoa powder (optional)
2-3         very ripe bananas, peeled and mashed into small pieces


3 cups / 250 g / 700 ml    rolled oats
1/2 cup / 80 g / 120 ml    raw almonds, coarsely chopped
1/2 cup / 80 g / 120 ml    raw pumpkin seeds or other seeds or nuts
1/4 cup                            raisins or coconut flakes (optional)
1 cup                               dark chocolate chips
  • Preheat the oven 400°F / 200°C and line a baking tray with baking paper.
  • Mix all the ingredients in the order (wet first, then dry ingredients, chocolate chips at last). 
  • Spoon the dough or spread it in an even layer on the baking tray. 
  • Place in the middle of the oven and bake for 15 to 20 minutes, check at around 10 minutes and turn the granola over with a wooden spoon. 
  • Allow to cool completely before putting in a container. Serve with organic yogurt and fresh fruits.




小高姐的香蕉蛋糕:

Banana:                                         3
Unsalted butter or other oil:         120g (1/2 cup) (melt)
Eggs:                                             2
Brown sugar:                                95g (1/2 cup)
Salt:                                              2g (1/4 teaspoon) (skip this if used salted butter)
Baking soda:                                 2g (1/4 teaspoon)
Baking powder:                            4g (1/2 teaspoon)
All purpose flour:                         300g (2 cups)
pecans:                                          70g (1/2 cup)
  • Preheated oven 350°F / 175°C 
  • Mix all the ingredients in the order.
  • TIP: Keep some butter/oil, brown sugar and pecan to the end for adding them on the top
  • Bake for 1 hour, then remove foil, bake for an additional 10-15 minutes




升级版香蕉蛋糕:

女儿尝试过很多香蕉蛋糕的方子,这一款烤出来是最松软,口感最好的。没有coffee liquor,她加了白兰地😉  不管加什么,就是为了增加口味层次。
